Shahi Piece

Shahi Tukkur is a popular and delicious dish of Mughal cuisine. This quick and delicious dessert is made by frying bread in ghee, soaked in a sugar syrup scented with rose and cinnamon. It is served with rabri (a fragrant and creamy sweetened condensed milk) flavored with saffron.

What you need to make the recipe

• White bread: 6 pieces

For the rabri:

• Milk: 4 cups

• Cardamom powder: 1 teaspoon

• Saffron: 1 teaspoon, grind well with your hands

• Salt: 1/4 teaspoon

• Condensed milk: 300 ml

For serving:

• Cashews or pistachios

• Extra saffron

• Rose petals (dried or fresh. If fresh, wash well and cut into small pieces.)

Recipe

1. Cut the brown part of the bread and separate it. Then cut all the bread into similar pieces: triangles, squares, whatever you like. But make sure all the pieces are the same. For ease of cutting, you can cut one piece and use it as a measure, while cutting the rest of the bread.

2. To make rabri, mix all the ingredients of rabri except condensed milk in a large bowl and then put it on the stove and cook for 5-7 minutes. So that it thickens a little. If you want the rabri to be thicker, then cook for another 5 minutes.

3. Now add condensed milk to it. If you want the milk to be thicker, then use less condensed milk.

4. Fry the bread slices in oil or ghee until golden brown.

5. Now put the bread slices in the rabri and cook for a few minutes, so that the flavors can mix well with the bread.

6. It is better not to cook the bread for too long, otherwise it will be difficult to lift it onto a plate later.

(And if you want to make it in advance and keep it ready, put the bread in a bowl and pour the rabri on it. The bread will absorb the mixture as it cools.)

7. Once it is cooked, remove it from the stove and let it cool. Then keep it in the refrigerator for some time. Sprinkle almonds, rose petals and saffron on top and serve this delicious dessert.
